- 1/2 cup grated carrots
- 1/4 cup raisins or chopped walnuts (optional)
- 1 tbsp maple syrup or honey
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- Pinch of salt

- Stovetop: Combine all ingredients in a saucepan. Bring to a simmer over medium heat, then reduce heat and cook, stirring occasionally, until oatmeal thickens (about 5-7 minutes).
- Microwave: Combine all ingredients in a microwave-safe bowl. Microwave on high for 1-2 minutes, stir and continue microwaving in 30-second intervals until the desired thickness is reached.
