Ingredients

  • 1/2 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • 1/2 cup grated carrots
  • 1/4 cup raisins or chopped walnuts (optional)
  • 1 tbsp maple syrup or honey
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • Pinch of salt

Instructions

  1. Stovetop: Combine all ingredients in a saucepan. Bring to a simmer over medium heat, then reduce heat and cook, stirring occasionally, until oatmeal thickens (about 5-7 minutes).
  2. Microwave: Combine all ingredients in a microwave-safe bowl. Microwave on high for 1-2 minutes, stir and continue microwaving in 30-second intervals until the desired thickness is reached.
  3. Top with your choice: Cream cheese frosting, yoghurt, chopped nuts, and a drizzle of honey.
