Ingredients:

For the Cupcakes:

  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup + 2 tbsp milk
  • 1 1/2 cups chopped strawberries

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract
  • Fresh strawberries, for garnish

Instructions:

Make the Cupcakes:

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together melted butter, sugar, and vanilla extract until combined. Beat in eggs one at a time.
  • Stir in sour cream and milk. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Gently fold in chopped strawberries.
  • Fill cupcake liners about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cupcakes cool completely before frosting.

Make the Frosting:

  • In a large bowl, cream together butter and powdered sugar until light and fluffy.
  • Gradually add strawberry puree and vanilla extract, beating until smooth.
  • Frost cooled cupcakes and garnish with fresh strawberries.
